Chow Mein Noodles

A must try Chinese all-favorite dish prepared with noodles, vegetables and your favorite choice of protein. I prefer chicken!

Yields1 Serving
Ingredients:
 100 g Chow mein noodles*
 Water to boil the noodles
 1 Chicken breast, cut into thin slices
 3 tbsp Vegetable oil
 1 tbsp Sesame oil
 1 Clove of garlic, finely chopped
 ½ cup White onions, julienned
 ½ cup Green onions, roughly chopped
 1 cup Green cabbage, roughly chopped
 ½ cup Carrot, sliced
 1 cup Broccoli
 ½ cup Fresh mushrooms, sliced
 ½ cup Bell pepper, julienned
It's all about the sauce:
 1 tsp Cornstarch / cornflour
 3 tbsp Soy sauce**
 1 tbsp Rice vinegar
 1 tbsp Sugar
 1 tbsp Sesame oil
 Salt and black pepper to taste
 2 cups Chicken stock***
Let's make the sauce:

Mix together cornflour, chicken stock and soy sauce, then add in remaining ingredients.

Marinate the chicken:

Pour some of the sauce we just prepared over the chicken, mix to coat, set aside to marinate for 5 minutes.

Don't forget to cook the noodles:

Bring water to boil. Add the noodles and cook for 5 minutes, then drain.

Now comes the fun part:

Heat vegetable oil in wok or large frying pan over medium high heat.

Add garlic and white onions and stir fry for 30 seconds, don't let it burn.

Add chicken and stir fry until cooked, about 5 minutes.

Add all remaining vegetables and the sauce. Cook until vegetables are mostly wilted.

Add the cooked noodles and sesame oil and stir fry for 1 minute, tossing constantly.

Remove from heat and serve immediately.

** I prefer to use Kikkoman soy sauce.
*** Instead of chicken stock, you can use 1 chicken bouillon per cup of water.
